To all my fellow Canadians, if you have been to The Keg, you know that their garlic cheese toast is heavenly. As a former employee of The Keg, I sadly could never find out the recipe for my favourite appetizer, but I managed to come up with this Keg copycat cheesy garlic toast.

Wait, wait, don't exit the page yet! I know you are probably concerned about my choice of mayonnaise on garlic bread. It sounds strange, but I assure you that it is KEY to making the most indulgent cheese spread for the garlic bread. Fear not, mayo does not get weird when you heat it up, in fact, you won't even know it's there. Consider it the perfect vehicle for garlicky, cheesy goodness.
Not at all! Mixing up with the butter, cheese and mayo mellows the garlic out. In the end, you get a perfect mix of flavours, and dare I say, one of the best garlic breads you have ever tried. If you are not a fan of the pungency of garlic, you can substitute garlic powder instead. It will still give you a great flavour, without some of the strong flavour you get from a clove of garlic.
First of all, I do not discriminate. I love garlic bread, and in fact, look forward to it. The difference with this garlic bread, is that the butter, mayonnaise and cheese are combined together into a spread and slathered onto the bread. It doesn't completely melt, which is 100% a good thing! It's hard to explain, but you need to try this copycat keg cheesy garlic toast for yourself.
cup (125 mL) softened goat cheese cup (50 mL) grated old cheddar cup (50 mL) grated Parmesan2 tbsp (25 mL) chopped freshflat-leaf parsley tsp (2 mL) cayennePinch kosher salt
1. Combine butter, goat cheese, cheddar, Parmesan, parsley, cayenne and salt in bowl of food processor. Pulse just until ingredients are combined, about 30 seconds. (Alternatively, the ingredients can be mixed together in a medium bowl with a fork or wooden spoon.)2. Scrape butter mixture onto a sheet of parchment or waxed paper. Roll into a 1-inch (2.5-cm)log, about 10 inches (25 cm) long. Roll up ends and refrigerate until ready to use.
